Introducing Tie Guan Yin, renowned for its rich aroma. This tea hails from the village of Xi Ping, where traditional methods are employed in its preparation. Similar to the Wu Yi Shan teas, the situation surrounding Tie Guan Yin has witnessed changes due to the booming market demand. In response, tea makers from South Fujian have significantly altered their production techniques. The tea now exudes a stronger fragrance, but has lost some of its original bitterness and sourness in terms of taste.
However, staying true to our traditional values, we have persuaded our suppliers to recreate the same Tie Guan Yin as it was ten years ago. With larger tea leaves, increased fermentation, and minimal stems, the result is a tea that boasts a thick aroma and a robust flavor accompanied by hints of bitterness and astringency from the carefully selected leaves. This embodies the essence of the old-school approach.
